Food Laws regarding home made products

i am currently in the process of planning to open a smll bakery/confectionary shop in the local tourist town. to make the best profit and to have the best quality products I think it would be best to make most of the items ourselves on the premises. However by doing this we will not be able to know what nutritional information applies to our producrs, i.e. how much fat does this home made cake contain (obviously we will know what ingredients we will have used). is it against the law not to have nutriotion information? Also, the items in some cases will not have packaging (other than the bag or box its put in when it is sold) so there will not be ingresients, or allergen information on those items. is this against the law too? if it is, can anyone help me in getting around it? I have been in a few bakery shops and they don't give out ingredients or nutrional information on the loose products they sell so i'm unsure as to how it works regarding this
