At planet scale gravity will pull all matter into the centre of mass. Most planets are in fact (slightly) elliptical probably due to the centrifugal force of thier spin.
Actually, thinking about it gravity at any scale will pull matter into the centre of mass.

Asteroids aren't always round.

I'd say a combination of gravity and centrifugal force.
because they would look silly if they where cubes
