On the last Sky At Night, a scientist suggested that proto-stars were formed by the buffeting of interstellar dust by solar winds into denser areas which then condensed under growing gravity into stars. However, I thought that it was now beleived that proto-stars formed in gravity wells caused by irregulaties in the 'wrinkled' quantum foam of the universe. Does anyone know which is the most widely accepted theory?

Is it possible that you're describing two parts of the same process and that the "denser areas" referred to on sky at night occur due to gravity wells?
