Operating a Harmony Oil burning stove

I've just moved to a house with a Harmony Oil Burning Stove which heats radiators and water. We turned it on and have the dial set below 1. The house got so hot we turned off all the radiators except the bathroom. The lounge is unbearably hot and the hot water is so hot we are afraid the tank will burst - we have to run water off regularly and it comes out of the tap bubbling. Is this normal?
The advice given in the instruction booklet is to leave it on, as it is fiddly to turn on and off and you have to let it cool down for two to three hours minimum before you can turn it on again

It gets hotter if I turn it up - lots of flames. I have thermostats on the radiators, but in any case the radiators are all turned off (apart from the bathroom. YOu have to leave one on) and it's still too hot in our living room. We've had a qualified heating engineer in to service it and he says the dial is working properly, but doesn't seem to have any ideas about what to do about the dangerously hot water (other than running it of and we're metered so that seems an expensive option)
Christiana ......... I'm no boiler engineer, but I've had a quick Google. It would seem to have much the same burner arrangement as a Rayburn, or Aga. They have quite a lot of control, including the ability to turn right down to tickover. I have more experience with Agas, where many people leave them on all year. The water just stays warm usually, not boiling.
If your control is ok, then all I can think of is you have too much updraught which is causing the stove to "run away".
Did the guy use a draught guage during service? ............ he should have.
Check the manual. You likely have a draught regulator which is adjustable.
