Home Made Ice Cream - With Powdered Milk, And Other Non-Fresh Ingredients

is there a way to make a decent simple ice cream without needing fresh milk or cream?
i dont often by fresh milk or cream you see but often get the urge to make ice cream but dont have the ingredients in.
i often have eggs and butter in - not always but they are an option if needed.
i want ingredients i can buy and just leave at the back of the cupboard 'indefinitely' really.
i am veggie so dont really want to use gelatin (unless the veggie stuff?)
any ideas or recipes?
i looked online but so many include powdered - but also cream, or even more milk.
can you make it with UHT milk?
