Uht Skimmed Milk

I always buy cartons of skimmed milk....it tastes better to us in coffee and cocoa, hot chocolate etc, than "fresh" skimmed, which we find slightly watery.
We get through a fair amount of it, so when I noticed Sainsburys had a price hike not so long ago, I decided to check Aldi and Lidl prices. 49p a litre!! Sainsburys 65p!.
Have been buying it from Aldi or Lidl ever since, (and I'm reaching my point now!) but I've noticed a skin forming on it when heated (barf). Why should this happen when there's no fat? Sains uht skimmed never did this.

sheba can't help you on this as I only buy full cream products. prefer to go without rather than lose taste. I make choccie or cocoa with water and add only a small amount of milk. i'm useless as a person to advise anyone else. ( hangs head in shame and sits in a corner)

Hi Bath, have you found this 'skin' on both Aldis & lidls? I buy mine from Asda, though occasionally I have bought Aldis brand. I can't remember seeing a skin on it though x
Sorry, is it powdered milk or fresh liquid milk you're buying bath?
Skin on heated milk is nothing to do with fat content...it's the protein in the milk reacting to being heated. Quite why the difference with Sainsburys, don't know!
Baths - have you tried the 1% fat fresh milk it's between skimmed and semi skimmed. Usually has an orange or purple cap and I find it quite palatable.
Skimmed milk still contains a small amount of fat which will skin up when boiled. http://www.milk.co.uk/page.aspx?intPageID=43

Hi Lina. It's UHT milk in a carton, longlife stuff.

I am with you I also buy UHT skimmed milk - its actually quite creamy tasting and fine for porridge, coffees and cooking with.

As for the skin, that is normal and its to do with proteins heating up in the milk.

Oh, nearly forgot...never ever had a skin with heated Sains UHT Longlife Milk,....perhaps that's what the extra 16p is for! ;) x x

Looks like I was right about the fat, but it also states here that a skin won't form on skimmed milk,....obviously they've never tried Aldi or Lidl skimmed milk ;)

thank you daisy. have done as you suggested. all guns primed and ready. once bought that milk (for a reason) but would rather go without. agree with hopkirk over the name.

Dilute UHT full-fat milk with water 50/50 - result is very similar to skimmed at nearly half the price. When you have used the first carton pour in 500ml water, top up with milk from second carton and then top up second carton with water and so on.
