Chocolate Truffles

I've just watched the Videojug recipe for choclate truffles, and they actually put 2 tablespoons of water in the bowl with the chocolate before putting the bowl into the bain marie. I thought any contact with water made the chocolate grainy.

the resipe is a simple one.
I warm up the cream, dont boil it with a small amount of butter in a pan. The add grated chocolate to it and stir til it melts. (or melt chocolate in microwave - carefully- and add that instead of grating it)
Stir well until fully mixed, then leave to set. Once set make into balls and dust with whatever you fancy.
Mine have all been plain this year as they are for the kids teachers. But i made white chocolate ones and dusted them with icing sugar and pink edible glitter and the dark choc ones were dusted with cocoa powder and red edible glitter.
If im adding alcohol i would probably just add a small amount to mixture so as not to make it too runny.

i have also been making some as presents this week. Mine are 7 floz double cream heated up in a pan, pour over 200g of smashed up chocolate, stir in then add tablespoon of bacardi. hand whisk for about 5 mins till cool, put in fridge for 40 mins, then shape into balls and roll in cocoa/ sprinkles/whatever
If you are thinking of next year, get a pot of ordinary glace cherries early in the year rinse the syrup off under the hot tap stick them in an airtight container then slosh in some rum or brandy and stick the pot in the cupboard. About once a month or so shake the pot and turn it over so all the cherries get soaked. Next december drain the cherries very well and dry them on kitchen paper then cut them up into smallish pieces and stir into the truffle mix before shaping mmmmmmmmmmm
