can anyone tell me what would happen if i knitted something in a more chunky/bulky wool than the pattern advised and didn't change the pattern at all (it's a hat) - would it still fit??????????

Would be a tea-cosy. It would knit bigger.
If you really want to use pattern/ wool then knit up a test square and measure how many stiches to a 2 inch square ( usea window cut from card ) and compare the figures to the tension given in the pattern and adapt. EG pattern says 12 stiches / 10 rows to test square your wool knits to 9 stitches /8 rows to test square . ...Then instead of casting on ( say ) 60 stitches you would cast on 45. Rows are generally done by measuring so not so difficult . Watch out for shaping but with a small garment probably so important. Happy knitting.
