If the weather's poor, head for the Museum of Science and Industry in Manchester:

It's an absolutely fascinating place (and free!) even if you hated Science at school! (It takes several hours to go round even if you skip the less intersting bits). The museum is in the Castlefield area which is becoming popular with tourists so you shouldn'y have any problems finding somewhere pleasant to eat & drink. (Also, if your girlfriend is one of those women who don't think that a day out is complete without a bit of shopping, you're only just down the road from all of the temptations of Manchester city centre!).

Hawkstone park and follies, Chester Zoo, The Outlet Village (Cheshire Oaks - Ellesmere Port) for great shopping!, Liverpool (great shopping again, ferry 'cross the Mersey, Cathedrals, lots of Beatles stuff), Chester, Delamere Forest, Shrewsbury, Stapeley Water Gardens, Bridgnorth, Knutsford, .........................depends what kind of day you (and she!) want.
Stratford is a really good day out, loads to do. Buxton is nice too. Or go ice skating in Telford for the day. If you fancy a longer journey drive down to Aberystwyth, its a stunning journey from Staffs and you can stop off and watch red kites on the way and stay in a seafront B&B overnight - its very quiet this time of year.

Its good to know that you are going on a trip with your partner. There are many beautiful places to travel. When I was about to travel, I took the help of luxury travel blog to know the best places near me. As you are also facing an issue in deciding the places to visit on your trip, you can also do the same.
