I love Nigel Slater and much of his cooking but that recipe really does look like a mountain out of a molehill at a hectic and stressful time for many.
Suggestions for getting ahead with your sauce gravy would have been better IMHO.
I'll probably be having over cooked food. FIL views any veg with a bit of bite as raw. I don't care though...all I do is the dishes (some of the dishes, they have a dish washer)
I'd make it ahead of time...and anything with onions and shallots gets my vote.
Parsnip mash/puree is to die for...that reminds me that I've not made it in a while.
We are going out on Christmas Day so none of these will be needed but there's always the days between Christmas and New Year. Perhaps on New Year's Day, itself, I will push the boat out.
