I can think of two:Afghanistan and Azerbaijan.

It was only when I tried to think about this that I realised how many do start and end with "A". Amazing, and good question.

And the 3rd is taken as Ascension Island, but not sure if it is actually a country. There are no others.

I remember this as a "-gry"-type trivia question from when I were but a nipper, the question always claimed there were three, and the answer was Afghanistan, Azerbaijan and Abu Dhabi, but the last one is one of the the constituent parts of the United Arab Emirates and so is a bit of a cheat...
