Is there any way my TomTom (One) will do the whole GPS thing so I can go Geocaching or will I have to buy a unit?

Basic answer: no. You need an actual GPS handheld. The TomTom One has no facility to accept co-ordinates (as far as I'm aware - I have one and have never found it!) - just addresses or postcodes. I have a Garmin GPS which has just about every mapping datum you could imagine.
