Take the person specification and match WITH EVIDENCE your skill, knowledge and experience. There is nothing wrong with presenting this page in the same format as the person spec which will make it very easy for the shortlisters to see if you meet first the essentials then the desirables, Don't be afraid of giving too many examples as points are awarded for each requirement.
