Peaceful holiday with sun - any recommendations?

We had to cancel our US holiday a couple of weeks ago because my husband hurt his back.
He's needing to rest it for a few weeks, but we desperately need a holiday.
Assuming the insurance company pay up and he's up to travelling - in a month's time maybe, can anyone suggest somewhere we can go that's peaceful and sunny and not hideously expensive. We'll have to leave California until next year because of the length of the flight, I don't think his back would be up to it. So we're probably looking at somewhere in Europe. Perhaps a villa holiday, but somewhere warm where he can rest for a week that gets us away from the rainy UK. We don't have kids, so we tend to stay away from places where families go ... sorry everyone with children. This was to have been our first proper holiday for over 15 years, so you can imagine how disappointed we were when we had to cancel. Any suggestions would be wonderful, thank you all so much.
