Do you have to have hymns for a church ceremony?
Can you a "religious element" at a non-church wedding (hotel or register office)?
How far ahead would you have to book for a weekday wedding?
....the reason for the questions? I'm pregnant and we want to get married ASAP (preferably before I'm 5 months May time) ;-)

We were married in church, because we thought it was more permanent (it was - we have been married for 61 years) and as we could ony afford the minimum, we had no hymns and no other trimmings, only the actual wedding ceremony. Hope you get the answers to the other parts of your question.
