By the time the water was turned into wine the wedding guests must have already had a few. How could they have known that what they were drinking was better, unless the first drinks they were offered were dire?

I can turn wine into water, I can do the same trick even better with beer!
Have you already had a few? You don't have to be p***d to appreciate good drink. It's just like having a few blended whiskies before being offered a premium malt. I gather you are of the Roman persuasion so perhaps the cardinals and the Pope can explain better than I can.

There's a coincidence. I'm in the process of turning two £12 bottles of wine I bought as Christmas presents into the same thing, H2O.

After you'd had a few you'd need to be a connoisseur to detect a better drink.
What you are turning your wine into is CO(NH2)2, not H2O.
maybe it had an 'appellation controlee' sticker on it?

It's a figure of speech. I regularly pass water. I wouldn't recognise CO(NH2)2 if I fell into a ditch filled with it.
The landlord of my 'local' had the name I P Freshwater .I kid you not!

No. When I was in a state to be falling into ditches I wouldn't have know my elbow from another part of my anatomy, never mind taking time to study the chemistry of my new environment.

I don't think Jesus turned water into wine or at least the wine we all know today. I believe so on the basis of only one thing and one thing alone. How can a prophet give his followers something that will destroy the health of millions in the centuries to come?

Free will comes into play here. Timothy 5:23 had it about right when he advised moderation.
Drink no longer water, but use a little wine for thy stomach's sake and thine often infirmities.
I can turn water to wine adding grapes, sugar & yeast. Am I a prophet?
