Surely has to be motorbike racing
It has been suggested that lawn bowls has the highest fatality rate, simply because it's not uncommon for elderly players to die on the green. (It happened at the bowls club where I used to run the bar, and I've read of several other occurrences around here).
You need to know the number of fatalities compared to the number of participants.
Horse racing - unless you're only referring to human deaths
Eventing.

What rules do they use over there?
Show Jumping / three-day eventing has a surprising number of deaths as a result of falls from the horse .
Also (if you consider it a sport) mountain walking / climbing takes a steady toll especially in wintery conditions .
Same with scuba diving .

I think it is Fishing, mostly of course from people fishing in the sea, but not only sea fishermen.

There are many drowning each year from people fishing, from getting washed away by a huge wave while sea fishing, to drowning while fishing in lakes and rivers.

Many fishermen wade in too deep and with their large waders on which fill with water they cant get out.

So I think it is fishing.

It's not the actual playing of Bowls that is dangerous. If it was played by younger players the death rate would be zero.
I would think horse racing 'over the jumps' would be a strong contender for both horses and rider.
Until the 1950s there were Karate ' Death' matches in Japan. As the name suggests these went on until one of the 2 contestants was killed by the other.

depends on what you mean by sport as well.

free diving and base jumping are pretty dangerous... but are they sports or hobbies?

but generally i woud have to say: motorcycling.

it would be difficult to find any statistical analysis as it will not be recorded as say 'death by golf' but 'heart attack', or 'severe burns from lightning strike' etc.
...sorry, meant to say that's very high but mountaineering not on the list.
I am sure I have read that it is fishing. For the reasons VHG gives.
