Editing iphone/itunes music

I have some music in my itunes folder and have been able to sync it over to my iphone.
When I do this though to sync new music over I only seem to be able to sync the whole list of tunes which means they get duplicated and I get muliple copies of the ones which where there before but can't work out how to delete any on either my phone or itunes.
I lost a load of tunes when I updted my iphone software after a backup and they all disappeared with all my photos which were on my phone too and haven't been able to find them anywhere on a backup.
Anyone got a dummies guide??? Seriously though, if anyone can help with editing my music and finding the music and photos that disappeared, that would be great.

For more on marking an answer as the "Best Answer", please visit our FAQ.In iTunes you should make playlists. When you plug in your iPhone, you can then just tick the box for the music you want on the phone, not the whole library.
Any music you have purchased on the phone will automatically sync to iTunes, so even if you update your phone and something goes wrong, the songs should be in iTunes which is your master library.

If you are already using playlists and have the song in 3 or 4 lists, then the file is only copied to your phone once, but is accessable in 4 places.
