This is a simple but frustrating request -- I have a page of figures and have scanned it into my documents? - This may be the wrong place - so I would like to re produce the page altering the text and figures on it to form a (second) separate sheet from the original sheet - how do I do that - All I get is a jpeg doc or similar so its like a picture and cannot be altered - I know this is a basic request - but you don't know what you don't know - thank you in advance

It was possible in Microsoft Office 2003 - no doubt it will also work in later versions.
Convert youur Scanned document into .TIFF format
Open that image 'Microsoft Office Document Imaging'

A scan is essentially just taking a picture of a document, so that's why you can't alter it any more than you'd be able to alter it if you took a picture of the document with a camera.
There are optical character recognition (OCR) programs that will convert the scan into a document. office one note is such a bt of software which you may already have (as you have word)
