Ipod Touch - Help Needed

I've owned an Ipod Touch 3rd gen for around three years. Don't laugh but after initially copying lots of CDs into Itunes and syncing to the Ipod, I have never since connected the ipod to the laptop to update etc. Until tonight that is!!
Over time I've added music to the itunes library mainly new CDs I've bought, and now wanted these on the ipod.
After connecting the ipod using the sync cable, it initially displayed that it was syncing, which I presumed was the itunes library, but then it invited me to update software etc, which I agreed to and clicked the various "accept" buttons. It then said this would take around 23 minutes, which it did. At the end of that time it displayed "I-TUNES COULD NOT CONNECT TO THE I-POD TOUCH "I-POD TOUCH" BECAUSE THE PAIRING RECORD IS MISSING. I have no idea what this means. However, the upshot is that I now have an ipod which when switched on has what I presume is a start u message as if fresh from the factory, with "slide to set up" appearing in numerous languages. On doing this it then displays "English" and "Espanol". I selected English which then gets a tick, but after that nothing happened. I clicked the Home button which then displayed "Start Over" and "Cancel". I opted for Start Over but again nothing more happens, it just displays "English" and Espanol" options again. Should I simply reconnect the Ipod to the Laptop and see what happens. I'm scared the next thing to happen is losing the contents of the itunes library, which took ages to add at the time. Thank you.
