Browsing forums about my new phone I see a lot of techie types talking about installing various 'Pixel Launchers'. I don't want to but can anyone example in simple terms what this is and does and why people are installing them on latest phone models?

The Launcher is the software that provides the main interface to the phone. ie, what the home screen looks like, how you interact with it, any special features, etc.
Most phone makers replace the standard launcher with their own, which they customise to a greater or lesser degree. You can replace the launcher with one of your own choice (I use the Evie launcher, because it's very simple and economical in terms of phone resources). A Pixel Launcher is one that attempts to emulate the one installed as standard on the Google Pixel phone.
