hide mail

hi all,
running window vista which now has windows mail aka outlook express
(not sure which version) through virgin media
my question is this..i know how to create mail boxes and email addresses.
but if i send a email how do i make it send from another mail box/alais so the person who gets the mail dos'nt see my mail domain email and it dos'nt get sent back to the main address
