I've been hearing some pretty large rats in my walls, and I saw dropping around my water heater, so I set up some snap traps with no luck. I was gonna have an exterminator take care of the problem, but it's expensive. There is a restaurant hiring for a dishwasher position, but im afraid ill carry over diseases, and such from the rats to the restaurant. What do you think?

I think you're being silly.  Take the job.

food handling whilst you know you have rats at home - I wd give it a miss....

In England we have rat council men who will come  out and poison - you or your landlord pays

1 Do you rent or own, if you rent - get the landlord onto it.

2 There is very little chance of you carrying any rat borne disease to your place of work (if you get the job)

Your priority is to get rid of the rats.  You know you can catch awful diseases from their urine, get it sorted.

Unless you have some in your pocket when you go to work, l wouldn't worry about it.  Take the job.  Hope you get on with your co workers...

You need to report yourself for not getting rid of rats and creating an issue for your neughbours. Seriously though have you seen any rat droppings. Where do you live Could be mice, raccoons, possums or squittels or rats. Get an exterminator

If you gain confidence after considering these factors, you should move ahead.

Your hygiene practices effectively keep you from illness and minimize the possibility of transfer.
The restaurant adheres to health and safety regulations and hygiene standards, and you will be working with hot water and sanitizing solutions. https://www.winterhalter.com/gastroknowledge/hygiene-requirements-foodservice-1

As long as you don't bring your problems to work it should be ok.

No course not.
