how come i can watch any video on youtube without requiring the irriatating "media player updates and plug ins" that are required on 99.9% of other websites? -

I am not sure, but I think that youtube has their own video player and what you can see is streaming video.

Like Tali122 says, Youtube streams their video in flv format - an embedded flash movie. If you were to download the videos, using keepvid.com for example, you would probably need to download an flv player to watch them on your own pc
