Can an email address be an extension on a domain name e.g. '[email protected]'
rather that '[email protected]' ?

Yep - that's how for example Freeserve used to do it. You'd need to firstly setup a sub-domain, and then configure the e-mail account from there.

How exactly you go about it is a little trickier. If you own the domain then contact the people you bought it through for details of how to do this. Most will be able to do it, although not all.
