I posted something similar to your question a week or so back, as everytime I returned to my iPod after it being switched off a few days the battery would have really gone down. I use to hold down the play/pause button to switch it off but now I use the sleep mode, it certainly seems to retain more battery by doing it this way.
If you go to your main menu and scroll down it should say 'Sleep' if not it could be cos you have re-arranged your menu, if so go to 'Settings', then to 'Main Menu' and scroll down until you find 'Sleep' click the centre button so it says 'On' then go back to your Main Menu and it should be somewhere near the bottom just scroll down and click and the iPod should go into sleep mode.
