Hot water ideas, please

I don't use a lot of stored hot water and don't have the type of gas central heating that gives instant hot water.
My washing machine and dishwasher are cold fill, and my showers are electric.
At the moment the gas central heating supplies hot water in the cold months and in the summer I have an immersion heater that is on for 1 hour 15 minutes per day using off peak electricity. I never run out of hot water.
Would over the sink water heaters be more economical? I would need two, one for the kitchen and one for the bathroom. Or is there another option that I am unaware of?

Off peak rates are generally about 1/3 of the cost of on peak. so assuming both the immersion and the above sink heaters were about the same rating (3KW) you could run a over the sink heater for about 25min a day for the same cost as your immersion heater.
Given the fact you'd have to pay for the over the sink heaters and install them even if it did save a little per day it would probably take years to break even.
