Recording Live Mixes Onto Laptop

I have an MP3 mixer which connects to laptop via USB and I output via the mixer to external speakers via the stero phono outputs to the single 3.5mm jack on the speakers.
I want to be able to record the output onto my laptop. I have Audacity but when I output the mixer into the line-in (mic socket) on the laptop the recording sounds like its going down the u-bend of a toilet (lol, best way to explain it) Its all modulaty and distorted.
Someone told me this is because the line-in on the laptop is for mono microphones etc and not a true analog stereo input.
I've looked at a few products; will the below do the job?
