How is it possible to write in italic,say I just want to stress one word when I am writing an e-mail,can I just press something to change to italic,and then back again,as simply as possible?

So now italics is all you get and even that goes kablooey if you use some punctuation marks inside the bit you're trying to italicise.
But the answer to the OP is, it depends on whose email service you're using.

It may help to know what you use for e-mail. What client (i.e. what programme on your PC) you use to read & write e-mails. Or whether you go to a web site to send and receive.
Once that's established someone with experience of it may be able to help.
Meanwhile try the 'Control I' thing others have suggested, it is reasonably common.
