Hidden Excel Cell Value

I wish to create an average risk score matrix in Excel.

The cells will be coloured from Red through to Green, with a text description in each cell.

Is there a way of giving each of these differing coloured cells a hidden value that, when there is a number of them, an average value of all cells can be calculated using the Editing option?

Can you make the font the same colour as the background of the cell.
