If you are talking about the bit after the river boat level at the start of the game, then you need to gallop away from him at the beginning, then maintain your distance from him. Don't push the horse too hard or you will kill it, like I did the first time.

Take a couple of attempts to learn the course, then you should beat him easily.

You need to master horse riding at speed or you will come unstuck in some of the later levels.
