adding subtitles to dvd

I have got a german dvd of video clips on, of which i want to add english subtitles to. I have read lots of guides but cannot entirely make sense of them. I have copied the disc to my hard drive.I am currently joining the clips together because i thought it would be easier if the dvd contained less menus (currently has 45) After that i am confused.I would appreciate anyone who can give me clear instructions on how to add the subs.I have tried to follow the guides on doom9.org site but finding it hard. Thanks
