Think about dressing the plate up for the meal as well - see what some coookbooks pics are like and copy them - if it looks good - it will taste even better!
My tip would be a paella - and if the weather's nice, make some sangria (dead easy and you don't have to be a wine expert) and eat it in the garden.
Buy a pack of paella rice and it'll have simple instructions on the back. It only gets as hard as chopping an onion. Splash out on a bit of saffron. Get some ingredients to throw in - maybe some skinless chicken thighs (brown these before rice goes in), crevettes or similar, frozen peas etc. All done in one pan. Garnish to tart it up (tomato / parsley). Bag of salad and dressing - job done.
