Vegetarian meal for two suggestion

Hi. My partner is veggie, and I would like to cook us a nice veggie 3 course meal for her b.day on saturday. Any suggestions on simple but tasty courses please? We live with eachother and I usually do the cooking, but I am just looking for some new suggestions and a fresh outlook on the veggie meal!

Starter: Roast a beetroot, cool and skin. Grate and top with a round of gpeats chees and dribble over fresh orange juice. Grill to get a brown top on the cheese and serve.
Main: Pasta with smoked slamon, peas and cream with carrot ribbons. Peel a carrott and with the same peeler, cut off long strips as ribbons of carrot. Blanch for 30 secs and add to the pasta. Melt a little butter in a pan, add smoked salmon strips and cook for 1 min. Add cooked peas, some cream and warm through for 30 secs. Season, serve with crusty bread and seasonal salad.
Pud. Make a choc fondue. Melt good high cocoa choc. with some cream and a touch of liqueur - grand marnier, or coconut rum etc. Dip in fresh strawberries, mango slices, pineapple, maderia cake, marshmallows, brioche etc

If you eat fish here is a fantastic easy recipe for salmon which is truly delicious
take 2 skinless boneless salmon fillets and top each with one teaspoon of sweet chilli dipping sauce. Grill under a hot grill for 6 -7 mins (until the salmon is cooked through and the top begins to char)
I serve with some boiled thai rice and fine green beans.

If you partner doesnt eat fish, why not try indivdual cheese souffles. Great recipe here

My daughter loves these for special occassions. serve with roast vegetables and potato wedges for dipping into the gooey centre.
For the starter and dessert, the first post recipes sound really lovely.

Take a look on the Vegetarian Society web site - some good recipes on there. I have made the floddies (grated potato cakes) they are really quick to do but look like they took ages.

'beetoor' is very similar to beetroot by the way . . .
Oh and just seen:- 'slamon' is a sort of alien fish not readily avialable on this planet. see Try with salmon instead.

Nickmo, would it work with already cooked beetroot (as in shop bought...because of course if I did it from fresh it would be cooked before going under the grill!! He he!)

And I'll refer you back to the AB question thingy recently that popped up a few times that research has shown that the brain can sort letter order to make text readable even if it is all mixed up - but I guess it can't sort word meaning though. If only . ..
I'm just glad I don't have to type in Chinese - 2300 characters in the language! and each can have up to 11 meanings or so - how big do their desks have to be to hold a keyboard!!!!! Ridiculous....

Hi BB - yes but never use that cooked and preserved in vinegar stuff. Roasting wil only take 30 mins or so, and you can do it a day or so ahead of course.
OK, so no fishy bits.
Right - New starter: Stuffed cherry tomatoes - slice off top, deseed and chop flesh. Mix with cottage cheese, herbs and fill toms. Flash under a grill for 30 secs to crisp the tops.
Main: I'd stick with pasta - how about a sweet chilli and red pepper sauce? Deasd easy - Place couple of red peppers in a pan and cover with water. Boil and reduce to simmer til tender - just soft to the touch. Remove from pan, slice off tops and de-seed. Cut up and place in a blender with a chopped chilli and pinch of sugar. Blitz til smooth. Dress cooked pasta with sauce and a few pitted black and green olives. Add some cooked peas as well if you like.
Pud. As before ok? or if its a hot day, outside with the barbie and make some fruit kebabs - pineapple, apricot, cherries, - brush with honey and grill 2 mins. Or a 'no cook' version - thread fresh fruit - whatever is tasting good near you at the moment - onto skewers, and serve with a yoghurt and lime dip and some nice brandy snap or sponge fingers for a crunch.

My sister is also a vegetarian. She refused to eat meat when she started getting stomach aches from eating meat. Just try a simple vegetable wrap! I actually think it is pretty good. Some advice: I heard not eating meat is not healthy for your body because you don't get enough protein in you. Try convincing you friend getting a little meat in their body will do them good!
