Hiya
I think you'll find that any software you were given with the scanner which will offer you the option of emailing the result. If not, save it to your favoured file but save it in .jpg as this type of file is much much smaller than anything else which makes it ideal for emailing.
Having done that you can then send it as an attachment to your letter or include it in it.
