Who really controls the Internet on a daily basis and how are they controlled - if at all.

No-one controls the entire Internet (though the FBI would like to). There are however various organisations which govern standards. These standards are then built upon to form websites, email etc. In the sense of controlling your web experience, your ISP can govern what you can access. Typically most ISP's do not as it can infringe on human rights and privacy, though the Goverment is considering legislation which would enable them to track any browsing for a period.
