fromage frais topping for a jacket sweet potato

any ideas what i can put with fr. frais, to make a nice sweet potato topping?? ..........thats a topping for a sweet potato, not a sweet topping for a potato!

Grated horseradish
Pesto - red or green - try making one with watercress, not the usual basil...
Coriander and fine diced smoked salmon pieces
Roasted cherry tomatoes, diced and sprinkled with herbs
Flakes of smoked mackerel
Chive, samphire and spinach blended to add colour and flavour - season with a little salt and pepper
Goats cheese and basil
Duxelle of garlic mushrooms and shredded ginger
Artichoke hearts and chilli
Diced cooked smoked bacon and grated extra mature Cheddar - none of the foreign stuff, buy British....
Sour cream and mustard
Avocado and bacon
Red onion and fennel
Asparagus and broad beans
Rosemary, sage and lemon thyme herbs
Creamed blue cheese - Dunsyre Blue, Cornish Blue or a good Cashel is a nice change from a stilton or blue brie....
Celery, chicory and carrot shredded with mustard powder and seasoning - instant coleslaw style...
Prawns, tomato puree and hot chili sauce
Could suggest a few more but hope that is of interest if the 'candied' sweet pots above aren't the thing - try them if you haven't had them before - well worth a go!!

thanks both. bbw - i had tried the brown sugar / cinnamon ones recently, perhaps in response to a previous suggestion on yours thinking about it! they tasted very halloweeney if you see what i mean by that?
nickmo - mmmm mackerel, cant believe i didnt think of that.
your replies didnt come through till after i logged off last night. i ended up with strong welsh cheddar, chopped red onion and mustard mixed in with it - it was nice, but im keen to try the mackerel...
