I think someone may spot u pulling out your phone and taking a picture during an exam, don't you? Besides it is against all rules to have a phone about your person during your exams and will result in disqualification in all of your exams. Trick is - don't cheat.

The noise is hardcoded into the ROM of the phone so unless someone updates the ROM and codes in a switch function for the sound you're stuck with it.
