I have some time on my hands & was thinking of doing an open university type degree at home. I need some ideas of what I can learn so as to make some money from working at home in the future using my (potential) degree.

It depends what you mean work from home. I work for a computer maintenance company but don't have an office, so I work from home, but don't stay at home during the working day. If you want to work and stay at home, then you could consider something like accountancy.
If your standard of English is good and you have some technical ability you could consider being a Technical Writer. There are a number of home study courses available and working from home is quite common. I write full time for an IT company but frequently work from home. Industries using tech writers include IT, engineering, motor industry, telecomms.
