As I cannot paste a picture here please accept my apologies for the graphical representation of this symbol:

It looks like two diodes together without the straight bar. My question is what component is it? It is shown accross the 240v ac supply rails of a thyristor controller made by Semikron. Is this important and what does it do?

your pic looks like a gunn diod, though quite what a solid state microwave generator would be doing on a 240v ac supply is beyond me.

I guess it is an interference suppressing device,idf the symbol was one up and the other down it would be a diac,used as a trigerring device in thyristor circuits Ess the link for a basic version http://www.hobbyprojects.com/thyristor_triac_a nd_diac/triac_and_diac.html
