Scanning paper to external storage device

i'm struggling here (again)....
my dad has 140 lever arch files. they are in order of year. he wants to put them on disc. he has an HP Pro 8500 scanner thing and i've given him a 120gb external hard drive. the scanner defaults to a folder called My Scans within My Docs. i want to get it to scan direct to external device but the preferences won't allow me

do you techy heads have a plan/solution to how he can achieve his goal of digitizing his paperwork to the point where he can retrieve any piece of paper at the click of a button? is the software that can do all of this kind of operation?

please be aware that my dad, though i love him dearly, is thick as pigsh*t when it comes to computers and i nearly erupted with fury at him about this (tongue in cheek) ;D

Why not just let it scan to the default location and then copy them to the external drive. I'm not sure whether there is a programme which would batch lable them. Otherwise you would have to lable each individual one.

Thick as pig**** is a relative term.
