Steel pipe connectors

I need to cut into an old 1" steel water pipe to check the flow rate. What is the best way to re-connect the cut pipe. I thought about inserting a short pice of alkathene pipe, but can not find connectors which will go on the metal pipe at one end and onto the alkathene at the other.

As Jom says, you could rent a thread cutting kit with standard, threaded jointers.
Possibly sleeve it with a bigger diameter piece, and gas, or electric weld it.
I don't know what the outside diameter is offhand, but try an assortment of olives, and re-join with a simple compression joint.
