Are you aware just how infrequent many US rail services are? In the UK we expect major cities, like Edinburgh and London, to be served by something like 20 trains (in each direction) every day. In the USA it's not uncommon for large cities, a similar distance apart, to only be linked by one or two trains per week! That would make planning an 'all-state' journey extremely complex. It would almost certainly take several months to complete.
A possible route might start with Austin, Santa Fe, Phoenix, Santa Fe, Carson City, Salt Lake City, Boise, Salem, Olympia, Helena, Bismarck, St Paul, Pierre, Cheyenne, Denver, Topeka, etc.
