I went to Egypt in December a few years ago and the waether was quite good. It was much cooler towards the north in Cairo, but still sunny. Aswan and Luxor, further south, were much warmer and we had a few hot days. On average it was 22-26 degrees (english summer weather!). We also went over to the Hurghada by the Red Sea - it was hot enough to sunbathe.
Evenings and early morning do get much colder so definitely take a warm jumper with you. I doubt you'd need a coat though.
