I've been to Austria a few times and although resorts in countries like these are mainly geared towards skiing there is usually lots to do apart from that. My family and I are non-skiiers but still enjoy the scenery, the toboganning, the designated walks, ice skating, snow shoeing, skidoos, sleigh sides, excursions to nearby 'big' cities, you can still get to the top of the mountains using walkers passes and then there's the shops, pubs etc. I am informed that countries such as Bulgaria, Romania etc are cheap but have less to do if you're not a skiier. Austria, Italy and France are probably best for a compromise of things to do and value for money. I advise that you get some brochures as they always state what non-skiing activities are available at each resort.
Some resorts book up quite quickly and I would expect that many will already have lots of bookings for next winter. As is often the case, many offer discounts for early bookings. I hope that helps.
