You may find that French Tax law will find you liable also to tax there, although the UK and France have a Double Taxation agreement which will prevent you from being taxed twice on the same income. Double Taxation agreements are the most mind-numbing reading imaginable, but in most cases they are written to ensure you pay tax at the higher of the rates of the 2 countries.
If your stay extends over a complete tax year and you don't make prolonged return trips , you may be treated as non-resident in the UK for tax purposes, and you will not be taxed here. You will however be taxed in France. You will also lose the tax free status of any ISAs you hold.
As regards National Insurance, you can continue to pay your contributions in the UK for 12 months, longer by concession if you apply.
