In fact the whole site is so huge and there is so much to see that some people stay there camping for a week.
I'm sure you would be able to find some tours in and around Amman which would allow you to get back to the airport in time for your flight.
While I would have agreed with SteveD that it wasn't practical to visit Petra in one day from Amman, I note that some short tours of Jordan (designed mainly for Israilis) do precisely that - see, for example, http://www.inisrael.com/cto/jordan_tours.htm
However, I imagine that there is a very early start from Amman, and the return there is very late in the evening; so this might not fit in with your flights.
