Has anyone gone to N.Z. with TWO stop overs?
We would love to go, but 16hour flight before a stop over is a bit too much for us.
If we could stop twice that would be great.

Can you not have Thailand as your single stop? Approx 12 hours direct from the UK. I've done it a few times and its quite bearable!

www.newzealand.com offer 'UK > Dubai > Australia > Auckland: 29 hours ( two stops)...
^ That is 29 hours actual flight time...
it shouldn't be that long - if you go via LA or HK or Tokyo you'll get two legs of about 12-13 hours.

But yes, you can do it as snagged suggests. There are more places to stop if you fly east via Asia than west via the USA.
I emigrated to NZ many years ago and stopped over in Singapore - boring, but when I left, I stopped over in San Francisco and New York - both fantastic places - I would recommend this way. snagged has a good option too.
We went via Los Angeles from Heathrow (10 hours)
LA to Fiji (10 hours)
Fiji to Auckland (4 hours)
Total around 24 hours flying time.
