Can anyone recommend a hotel in the northern half of the island of Ireland where vegan/vegetarian tastes are well catered for?

Thanks to you both for your responses.I realise now that I should have explained my query better. The responses so far give details of establishments specialising in vegan/vegetarian food. We are a couple, one of whom is vegan, the other preferring traditional hotel fare. The best I can hope for, probably, is a recommendation for a hotel where the food is good and the chef is prepared to make a bit of an effort beyond the inevitable stirfry! Am I looking for the impossible? Sligo, Donegal, Mayo, Cavan, Westmeath are the conveniently accessible areas for us,pinktwink. Thanks again.
just book into a local hotel and check out the local restaurants that cater for vegetarians

Thanks, pinkwink. You've given me plenty of food for thought! I stayed in the Hodson Bay a couple of times. If the others are as good as it I will be well looked after.
