I honestly can't see the appeal if Arkwright's no longer in it. You need him and Granville together to make the magic.

A fair bit of the humour of Open All Hours was the stuttering of Arkwright, I can't see the BBC agreeing to a character like that these days (to have his stuttering laughed at I mean).
The old shows had a perfect cast, leave well alone, it just wouldn't be the same if re-made.

The only scenario I can imagine would be that Arkwright is dead (obviously!) and that Granville has taken over his uncle's shop. I suppose the twist would be that, despite Granville's best efforts to join the permissive society, he has actually turned into Arkwright.

Sometimes these sequels (or even prequels) work, like Rock and Chips. However, more often they are embarrassingly cringe-worthy, like First of the Summer Wine.
